LENORA DANNELKE, an independent journalist covering food, travel, and anything fun, resides in Old Allentown. She has never eaten a peanut butter and jelly sandwich. Her pet peeve is seeing “macaron” misspelled as “macaroon,” especially by a bakery.

MADDOX JOACHIM is a chef at Kalaya in Philadelphia, run by James Beard Award winner Chutatip “Nok” Suntaranon. He previously worked at Osteria (also in Philadelphia) and in kitchens in the Lehigh Valley. Maddox co-writes the DigestThis.news with his dad, David.
MICHAEL JOYCE is a Lehigh Valley native, chef, and local food advocate who has worked in New York City and Philadelphia. When he’s not behind the stove at Bolete Restaurant, you can find him digging in his compost pile or searching for the perfect cortado with his wife, Alix.
LIZZIE LEIGH enriches connection from “across the pond” in Wiltshire, UK, through poetry and well-being services. She maintains the ancient tradition of writing poetically about tea, as well as inspiring others to deepen their kinship with nature. ROBERTO QUEZADA-DARDÓN was born in Guatemala and raised in the San Gabriel Valley suburb of Los Angeles. He attended UCLA film school and worked as a filmmaker for 25 years, focusing on lighting and camera work. He lives in Bucks County and works as a professional portrait, food, and architectural photographer.
MARIA RODALE is the author of Love Nature Magic, the cookbook Scratch, and Organic Manifesto. She is also the children’s book author Mrs. Peanuckle. But most importantly, she is a crazy gardener and cook who lives in Pennsylvania.
OLAF STARORYPINSKI has been taking photographs for over 45 years. His work has been published and exhibited internationally. He describes himself as “visually preoccupied” and has a deep appreciation for all art, food, and wine. Born and raised in London, he lives in the Lehigh Valley.
TIM VETTER is a teacher, writer, and podcaster living in Brooklyn, NY. He often spends time in Eastern Pennsylvania while visiting family in the Poconos.
